Roast Marinated Leg Of Lamb

Ingredients

  • 1 x lean leg of lamb, approximately 1 kg in weight
  • 1 pkt MAGGI Garden Mint Gravy Mix
  • 1 tsp oregano
  • 1 tsp dry basil
  • 2 x garlic cloves, crushed
  • 2 tsp grated lemon rind
  • 1/4 c. lemon juice
  • 1/2 c. red wine
  • 1 tsp MAGGI Chilli Sauce

Directions

  1. Trim the lamb of any excess fat.
  2. Place the lamb in a plastic bag.
  3. Combine the marinade ingredients in a bowl. Mix thoroughly.
  4. Pour over the lamb. Remove the air and seal the bag with a twist tie.
  5. Chill for 12-24 hrs.
  6. Drain the lamb and place on a rack in a roasting pan. Reserve the marinade.
  7. Roast the lamb in a preheated oven, 170 C, for 11/4 -11/2 hrs or possibly till the lamb is cooked to your liking.
  8. Brush with the marinade while cooking.
  9. Remove from the oven and stand the lamb in a hot place for 10-15 min before carving.
