Ingredients
- 6 sweet Italian sausages
- 1 each of teaspoon red pepper flakes, cracked fennel seeds and black pepper
- 1/2 teaspoon each of sweet pimenton (paprika) and fennel pollen (optional)
- 2 tablespoons olive oil
- For the risotto:
- 1 large onion, diced
- 3 cloves garlic, crushed and chopped
- 1 tablespoon olive oil
- 1/4 cup dry white wine
- 1/2 cup arborio or carnaroli rice
- 1.5 cups (approx) chicken stock
- kosher salt
- 1 teaspoon fennel seeds

.%20The%20first,%20an%20hour-long%20discussion%20of%20the%20age-old%20cricketing%20rivalry%20between%20England%20and%20his%20native%20land%20is%20of%20no%20concern%20here,%20but%20the%20second,%20a%20frank%20exchange%20of%20views%20about%20the%20quality%20of%20sausages%20to%20be%20found%20in%20the%20United%20States%20has%20rather%20more%20relevance%20to%20the%20subject%20matter%20of%20these%20here%20web%20pages.%20His%20view,%20that%20American%20sausages%20simply%20aren%E2%80%99t%20up%20to%20snuff%20compared%20to%20the%20quality%20and%20variety%20of%20those%20available%20in%20Australia%20%E2%80%93%20a%20country%20in%20which%20the%20mystery%20bag%20has%20achieved%20almost%20legendary%20status%20for%20its%20role%20in%20the%20great%20Aussie%20barbecue%20%E2%80%93%20is%20not%20one%20I%20share,%20even%20if%20there%20were%20no%20other%20examples%20of%20fine%20forcemeat%20here%20than%20the%20glorious%20boudin%20of%20Louisiana,%20although,%20in%20his%20defense,%20he%20was%20careful%20to%20exclude%20American-made%20Italian%20style%20sausages%20from%20this%20otherwise%20careless%20dismissal.%3C/p%3E%3Cp%3ETwo%20men%20arguing%20about%20the%20merits%20of%20their%20sausage%20could%20be%20opening%20line%20of%20a%20grubby%20joke,%20but%20in%20fact,%20it%E2%80%99s%20a%20highly%20meaningful%20topic.%20Pork%20sausage,%20as%20it%E2%80%99s%20widely-known,%20is%20the%20world%E2%80%99s%20greatest%20food.%20I%20can%20think%20of%20no%20other%20food%20stuff%20which%20provides%20a%20comparable%20level%20of%20variety%20and%20satisfaction.%20The%20range%20of%20flavorings%20to%20be%20added%20to%20the%20basic%20mixture%20of%20pork%20shoulder%20and%20fat%20is%20almost%20limitless%20and%20the%20unctuousness%20of%20pork%20seems%20to%20be%20the%20perfect%20canvas%20for%20sausage-makers%20around%20the%20world%20to%20demonstrate%20their%20flair.%20All%20of%20which%20means%20that%20unless%20one%20is%20sufficiently%20motivated,%20like%20my%20Antipodean%20chum,%20to%20make%20one%E2%80%99s%20own%20sausage%20from%20scratch,%20one%20can%20take%20one%E2%80%99s%20pick%20from%20the%20myriad%20sausages%20available%20to%20us%20these%20days.%3C/p%3E%3Cp%3EHowever,%20if%20you%E2%80%99re%20either%20deliberately%20bloody-minded%20or%20just%20feel%20like%20gilding%20the%20lily,%20you%20can%20augment%20your%20local%20sausage-maker%E2%80%99s%20offerings%20with%20flavorings%20of%20your%20own,%20which%20is%20what%20I%20did.%20Taking%20inspiration,%20once%20again,%20from%20Maxine%20Clark%E2%80%99s%20%E2%80%9CFlavors%20of%20Tuscany%E2%80%9D,%20I%20embarked%20with%20six%20fennel-scented%20Italian%20%E2%80%9Csweet%E2%80%9D%20sausage,%20adding%20some%20hot%20pepper%20flakes,%20a%20finger-nail%20or%20so%20of%20sweet%20pimenton,%20a%20pinch%20each%20of%20fennel%20pollen%20and%20black%20pepper,%20plus%20a%20generous%20teaspoon%20of%20just-cracked%20fennel%20seeds%20to%20the%20sausage%20meat%20after%20extracting%20it%20from%20its%20casings.%20Between%20two%20moistened%20palms,%20I%20rolled%20myself%20some%20micro-meatballs%20so-seasoned,%20browned%20them%20off%20in%20olive%20oil%20and%20paired%20them%20with%20a%20risotto%20bianco,%20garnished%20generously%20with%20fennel%20seeds,%20and%20washed%20it%20all%20down%20with%20an%20unpretentious%20Chianti.%3C/p%3E%3Cp%3EAs%20a%20speedy%20weeknight%20meal,%20it%20had%20the%20twin%20virtues%20for%20the%20ambitious%20home-cook%20of%20being%20easy%20and%20delicious%20while%20making%20me%20feel%20like%20I%E2%80%99d%20embellished%20the%20store-bought%20ingredients%20rather%20more%20than%20I%20had,%20which%20together%20with%20the%20great%20potential%20for%20sausage-based%20school-boy%20puns%20almost%20justifies%20posting%20about%20it.%3C/p%3E%3Cp%3EFennel-spiked%20Sausage%20Meatball%20Risotto%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EFor%20the%20meatballs:%3C/p%3E%3Cp%3ERecipe:%3C/p%3E%3Cp%3EWith%20a%20shark%20knife,%20slice%20open%20casings%20of%20sausages%20and%20turn%20them%20out%20into%20a%20bowl.%3C/p%3E%3Cp%3EAdd%20red%20pepper%20flakes,%20fennel%20seeds,%20fennel%20pollen%20and%20black%20pepper,%20and%20a%20splash%20of%20water,%20before%20combining%20together%20with%20fingers.%3C/p%3E%3Cp%3EMoisten%20hands%20with%20water,%20roll%20cherry%20(or%20larger)%20sized%20meatballs%20in%20your%20palms.%20Reserve%20on%20a%20plate.%3C/p%3E%3Cp%3EIn%20a%20saucepan%20on%20medium%20high,%20sweat%20onions%20and%20garlic%20in%20olive%20oil%20until%20translucent.%20Add%20rice.%20Stir%20well.%3C/p%3E%3Cp%3EAfter%20no%20more%20than%202%20minutes,%20add%20white%20wine.%20Stir%20well.%3C/p%3E%3Cp%3EAllow%20wine%20to%20reduce%20by%20at%20least%20half%20before%20adding%201/4%20of%20your%20chicken%20stock.%20Stir%20well.%20Continue%20to%20add%20more%20stock%20when%20rice%20dries%20out%20until%20rice%20is%20al%20dente%20and%20slightly%20soupy.%3C/p%3E%3Cp%3EWhen%20rice%20is%20about%20half%20done,%20in%20a%20saute%20pan,%20heat%20olive%20oil%20to%20medium-high,%20and%20brown%20meatballs%20well%20on%20all%20sides.%20Depending%20on%20their%20size%20they%20will%20either%20be%20fully%20cooked%20or%20require%20ten%20or%20more%20minutes%20in%20the%20oven%20to%20cook%20through.%3C/p%3E%3Cp%3EWhen%20both%20meatballs%20and%20risotto%20is%20cooked,%20plate%20together,%20sprinkle%20with%20extra%20fennel%20seeds%20and%20a%20drizzle%20of%20some%20of%20your%20best%20olive%20oil.%3C/p%3E){kind=link}
