Looking for  a way to use all those lentils leftover from New Year’s Eve? You could just reheat them, perhaps with some broth to make a soup, but here’s something even better, Rice and Lentils. It’s quick, it’s tasty and it’s pure comfort. I love this almost as much as pasta e lenticchie, my very favorite pasta dish that Angelina made when I was growing 500g/1 lb cooked lentils (see recipe on Cotechino e 150g/1 cup raw Broth or water, For Grated Parmesan Freshly ground Olive Bring the cooked lentils and a ladleful of the broth or water to a simmer in a braiser or Add the rice, along with another ladleful of  broth or water, to the pot.
