Ingredients
- 1 slc Bacon,
- 1 tsp Garlic, chopped
- 1/2 c. Onion, minced
- 2Â 1/2 c. Kidney beans, canned with liquid
- 3 c. Beef broth,
- 3 x Bay leaves,
- 1/2 tsp Salt,
- 1/8 tsp Grnd pepper, freshly
- 1/4 tsp Dry basil, crumbled
Directions
- Fry bacon over medium heat in heavy frying pan; crumble bacon and set aside. Reheat bacon drippings over medium heat; saute/fry garlic and onion till tender, stirring occaionally. Puree beans in blender or possibly food processor fitted with steel blade and stir into onion mix. Blend in crumbled bacon and remaining ingredients, stirring occasionally till soup is warm.
- Remove and throw away by leaves. Soup will thicken as it stands and be thinned with water or possibly additional beef broth.
