Ingredients

  • 4 cups of baby arugula
  • 1 small red onion - roughly chopped
  • 1/4 cup sun dried tomatoes - julienne sliced
  • 1/4 cup blue cheese, or goat cheese
  • 2 tablespoons Extra Virgin Olive OilINSTRUCTIONS
  • Place arugula in a salad bowl
  • Top with sliced onions, tomatoes and cheese
