Rildo's Brazillian Pudding (Flan) Recipe

Ingredients

  • 3 lrg Large eggs
  • 1 can Condensed lowfat milk
  •     Lowfat milk, to fill container to 4 c./w Large eggs and condensed lowfat milk
  • 2 Tbsp. Brazilian cheese, (like american cheese)
  • 4 Tbsp. Sugar
  • 1/2 c. Water, more or possibly less

Directions

  1. Put the Large eggs, cheese and condensed lowfat milk into a qt container; fill with whole lowfat milk. Blend in a blender or possibly with hand held blender, till well mixed.
  2. Take a 1 1/2 qt souffle pan and have it ready. Sprinkle 4 Tbsp. of sugar in skillet (best Teflon covered, or possibly Tablespoons-fal) over bottom, a little up the side. Put pan on top of oven on low heat, and the sugar will heat.
  3. After the sugar melts pour in 1/2 c. of water and let simmer on low heat till it bubbles (do not use the spoon), tilt and play with pan, till caramelized. You might need to add in a bit more water. When it's all caramelized, you put in souffle pan (NO butter). Cover the sides and the bottom. Pour the custard over the caramel in pan. Cover the top with aluminum foil.
  4. Preheat the oven to 375. You will need a large casserole; 9x12 or possibly bigger to hold the souffle pan. Pour water into the casserole, place in middle, of casserole...put it in the oven. Bake for 1 1/2 hrs, test with fork
  5. (remove small part of foil) to see if it is dry and hard (doesn't shake)...
  6. Cold and then chill...serve cool. Turn it out, after it is cold.
  7. NOTES: The cheese doesn't really give flavor but 'cancels' out the taste of the Large eggs.
