Ricotta Cheese Fritters (Ricottqa Fritta) Recipe

Ingredients

  • 1/2 lb almond macaroons
  • 1/2 c. powdered sugar
  • 1 lb fresh ricotta
  • 1/2 tsp freshly-grnd cinnamon
  • 3 lrg Large eggs
  • 1 1/2 c. flour
  • 1 Tbsp. water
  • 2 c. fine dry bread crumbs
  •     Oil for frying
  •     whole ipped cream
  • 1 c. honey
  •     Shaker of confectioners" sugar

Directions

  1. Preheat the fryer.
  2. In the bowl of a food processor, combine the macaroons and process till finely grnd. Add in the sugar, cheese, cinnamon, and 2 of the Large eggs. Continue to process till incorporated.
  3. Form the cheese mix into small balls, about a Tbsp. each. Roll the balls in the flour, coating completely. In a shallow bowl, beat the remaining 1 egg and the water. Dip each ball in the egg wash, letting the excess drip off. Finally, dredge each ball in the bread crumbs, coating completely.
  4. Fry the balls in batches till golden, about 2 min. Remove from the oil and drain on paper towels.
  5. Place a dollop of the whipped cream in the center of each serving plate. Lay the fritters around the whipped cream. Drizzle the fritters with the honey. Garnish with confectioners" sugar.
  6. This recipe yields about 2 dozen fritters.
  7. Yield: 2 dozen
