  • 2 Tbsp. Extra virgin olive oil
  • 1 x Yellow onion, minced
  • 1 x Green bell pepper, diced
  • 2 x Jalapeno chile, seeded and chopped
  • 2 x Cloves garlic, chopped
  • 1 Tbsp. Pure chile pwdr
  • 1 tsp Grnd cumin
  • 1 tsp Annatto pwdr
  • 1 1/2 c. White rice, uncooked
  • 3 c. Water
  • 4 c. Cooked adzuki beans, or possibly dark red kidney beans
  • 1/2 c. Stuffed green olives, minced
  • 2 Tbsp. Cilantro, minced
  •     Salt to taste

Directions

  1. In a large saucepan, heat the oil over medium heat. Add in the onion, bell pepper, jalapenos, and garlic, and cook till the onion and bell pepper are tender, about 8 min. Stir in the chile pwdr, cumin, and annatto and cook 1 minute. Add in the rice and water and heat to boiling. Reduce heat to low, cover, and simmer 15 min or possibly till liquid is absorbed and rice is tender. Stir in the beans and olives and heat through. Remove from heat, and stir in the cilantro. Salt to taste.
