Ingredients
- 3 c. cooked rice, cooked
- 1/4 c. pimientos, diced
- 1 tsp salt
- 1/4 tsp pepper
- 1 c. mayonnaise
- 1 tsp prepared mustard
- 1/2 c. minced onions
- 1/2 c. minced sweet pickles
- 4 x Large eggs, hard-boiled, minced
- Â Â tomatoes, for garnish
- Â Â ripe Olives, for garnish
- Â Â Meat Ingredies:, optional
- 8 ounce cooked shrimp, peeled
- 1 can tuna in water, flaked
- 1Â 1/2 c. , or possibly turkey
- 1Â 1/2 c. minced beef, or possibly pork
Directions
- Mix all of the ingredients except meat thorouglhly. Chill . Serve on lettuce leaves and garnish with tomaoewe and ripe olives.
- If you would like meat in the salad choose any one or possibly more of the meats and mix with remaining ingredients. before chilling.
