Ingredients

  • 1 quart. lowfat milk (total liquid)
  • 1/2 c. sugar
  • 1/4 teaspoon salt
  • 4 large eggs, beaten slightly
  • 1 c. evaporated lowfat milk (Pet) (this keeps custard from watering)
  • 1 c. cooked rice or possibly Grapenuts
  • 1 teaspoon vanilla
  • Butter
  • Nutmeg or possibly cinnamon

Directions

  1. Grease baking dish with butter. Add in rice or possibly Grapenuts to cover bottom (raisins also may be added). Scald 1 cup of evaporated lowfat milk plus regular lowfat milk (1 qt total) with sugar and salt. Add in this to egg mix, is then strained. Add in to baking dish. Sprinkle with nutmeg; dot with butter. Place baking dish into a pan with hot water. Place all into oven. Bake at 350 degrees for 1/2 hour or possibly till knife inserted into center comes out clean.
