Ingredients
- 1 3/4 cups (8.75 oz) all-purpose flour
- 1 tablespoon unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1 cup (7 oz) granulated sugar
- 1 large egg, at room temperature
- 1 tablespoon red food coloring
- 1 1/2 teaspoons vanilla extract
- 1/4 cup sour cream (light is fine), at room temperature
- Frosting
- 1/4 cup (4 tablespoons) unsalted butter, at room temperature
- 4 oz cream cheese, softened (reduced-fat is fine)
- 1/2 teaspoon vanilla extract
- 1 1/4 cups (5 oz) confectioners’ sugar

,%20luckily%20we%20very%20rarely%20have%20overnight%20guests%20%20Anyway,%20for%20that%20reason%20I%E2%80%99ve%20been%20really%20good%20about%20buying%20fewer%20of%20each,%20even%20around%20the%20holidays.%20But%20last%20week%20I%20had%20jury%20duty%20and%20I%20figured%20that%20earned%20me%20the%20right%20to%20buy%20just%20one%20holiday%20baking%20magazine.%20I%20decided%20on%20a%20Christmas%20cookie%20magazine%20from%20America%E2%80%99s%20Test%20Kitchen,%20so%20I%20spent%20my%20time%20at%20jury%20duty%20flagging%20recipes%20and%20dreaming%20of%20all%20the%20cookies%20I%E2%80%99d%20bake%20once%20it%20was%20over.%3C/p%3E%3Cp%3EFirst%20up?%20These%20red%20velvet%20cookies%20with%20cream%20cheese%20frosting!%20I%20remember%20the%20first%20time%20I%20had%20red%20velvet%20cake%20I%20wasn%E2%80%99t%20overly%20impressed,%20but%20I%20think%20that%E2%80%99s%20mostly%20because%20I%20didn%E2%80%99t%20know%20what%20to%20expect.%20It%E2%80%99s%20easily%20one%20of%20my%20favorites%20now,%20I%20make%20it%20at%20least%20a%20few%20times%20a%20year.%20And%20I%20actually%20had%20cupcakes%20on%20my%20agenda%20for%20this%20month%20until%20I%20came%20across%20these%20cookies.%20December%20is%20all%20about%20cookies,%20after%20all,%20so%20these%20seemed%20even%20more%20appropriate%20than%20cupcakes!%3C/p%3E%3Cp%3EIsn%E2%80%99t%20the%20vibrant%20red%20color%20so%20festive%20for%20the%20holiday%20season?%20These%20would%20be%20perfect%20on%20any%20cookie%20tray!%20The%20cookies%20are%20slightly%20crisp%20at%20the%20edges%20and%20a%20bit%20cakey%20in%20the%20center.%20They%E2%80%99re%20not%20quite%20as%20fluffy%20as%20the%20cake-like%20cookies%20that%20you%E2%80%99d%20use%20for%20whoopie%20pies,%20though%20you%20could%20definitely%20make%20cookie%20sandwiches%20with%20these%20if%20you%20want.%20They%20have%20that%20classic%20red%20velvet%20tang,%20provided%20by%20sour%20cream%20rather%20than%20the%20usual%20buttermilk.%20And%20of%20course%20they%E2%80%99re%20topped%20with%20sweet%20cream%20cheese%20frosting%20%E2%80%93%20that%E2%80%99s%20a%20must%20for%20all%20things%20red%20velvet!%3C/p%3E%3Cp%3EI%20sent%20them%20to%20work%20with%20my%20mom%20and%20apparently%20they%20lasted%20all%20of%205%20minutes,%20so%20I%E2%80%99m%20pretty%20sure%20that%20means%20I%20have%20to%20make%20them%20again%20for%20Christmas,%20right?%3C/p%3E%3Cp%3EPS%20%E2%80%93%20Today%20is%20the%20last%20day%20to%20enter%20the%20Amazon%20gift%20card%20giveaway.%20More%20info%20here!%3C/p%3E%3Cp%3ERed%20Velvet%20Cookies%20with%20Cream%20Cheese%20Frosting%3C/p%3E%3Cp%3Ejust%20barely%20adapted%20from%20America%E2%80%99s%20Test%20Kitchen%20Christmas%20Cookies%3C/p%3E%3Cp%3ECookies%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20F.%20Line%20two%20baking%20sheets%20with%20parchment%20paper.%3C/p%3E%3Cp%3ETo%20make%20the%20cookies:%20In%20a%20medium%20bowl,%20sift%20together%20the%20flour,%20cocoa%20powder,%20baking%20soda,%20and%20salt%20(you%20could%20just%20whisk,%20but%20I%20really%20like%20to%20make%20sure%20the%20cocoa%20powder%20is%20lump%20free).%20In%20the%20bowl%20of%20a%20stand%20mixer%20fitted%20with%20the%20paddle%20attachment,%20beat%20the%20butter%20and%20sugar%20on%20medium%20speed%20until%20fluffy,%20about%202-3%20minutes.%20Mix%20in%20the%20egg,%20food%20coloring,%20and%20vanilla%20until%20incorporated.%20With%20the%20mixer%20on%20low,%20add%20half%20of%20the%20dry%20ingredients,%20followed%20by%20the%20sour%20cream,%20and%20then%20the%20remaining%20dry%20ingredients,%20beating%20just%20until%20combined.%20The%20batter%20will%20be%20thick%20and%20sticky.%3C/p%3E%3Cp%3EUsing%20a%202-tablespoon%20scoop,%20portion%20the%20batter%20onto%20the%20prepared%20baking%20sheets,%20leaving%20about%202%20inches%20between%20cookies.%20Bake%20for%20about%2015%20minutes%20(rotating%20the%20baking%20sheets%20from%20front%20to%20back%20and%20top%20to%20bottom%20halfway%20through%20if%20you%20do%20both%20sheets%20at%20once),%20or%20until%20the%20centers%20of%20the%20cookies%20spring%20back%20when%20lightly%20pressed%20with%20your%20fingertip.%20Transfer%20the%20baking%20sheets%20to%20wire%20racks%20and%20let%20the%20cookies%20cool%20for%20a%20few%20minutes%20before%20removing%20to%20the%20racks%20to%20cool%20completely.%3C/p%3E%3Cp%3ETo%20make%20the%20frosting:%20In%20the%20bowl%20of%20a%20stand%20mixer%20fitted%20with%20the%20paddle%20attachment,%20beat%20the%20butter,%20cream%20cheese,%20and%20vanilla%20on%20medium-low%20speed%20until%20combined,%20about%2030%20seconds.%20With%20the%20mixer%20on%20low,%20gradually%20add%20the%20confectioners%E2%80%99%20sugar,%20and%20beat%20until%20combined,%20about%201%20minute.%20Raise%20the%20mixer%20to%20medium-high,%20and%20beat%20for%20about%201%20minute,%20or%20until%20the%20frosting%20is%20light%20and%20fluffy.%20Spread%20each%20of%20the%20cooled%20cookies%20with%20frosting.%3C/p%3E%3Cp%3EMakes%20about%2018-20%20cookies%3C/p%3E){kind=link}
