Ingredients

  • 1 jar roasted red peppers - (7 ounce) liquid removed, minced
  • 1 x garlic clove chopped
  •     Extra virgin olive oil as needed
  • 1 tsp lemon juice
  • 1/4 c. minced green onions
  • 1 pkt Athenos Crumbled Feta Cheese - (4 ounce) finely minced
  • 1 x French bread loaf cut 1/2" slices

Directions

  1. Mix peppers, garlic, 1 Tbsp. extra virgin olive oil, juice, onions, and feta cheese. Set aside.
  2. Brush bread slices lightly with extra virgin olive oil; place on cookie sheet. Broil on each side till lightly toasted.
  3. Top each toast slice with about 1 Tbsp. of pepper mix.
  4. NOTE: Bread slices can also be lightly toasted on cold portion of grill.
  5. This recipe yields about 1 1/2 dozen.
  6. Comments: Traditional bruschetta is an Italian workman's midday snack of thickly sliced country bread rubbed with garlic cloves and drizzled with extra virgin olive oil. This simple American version is easy to prepare and is topped with a tasty mix of roasted peppers, green onion, and Athenos feta cheese.
