%20and%20proclaimed%20that%20the%20entire%20condo%20smelled%20wonderfully!%20%20Win!%3C/p%3E%3Cp%3EI%20originally%20had%20intended%20to%20make%20this%20after%20yoga%20on%20Wednesday,%20but%20it%20turns%20out%20that%20I%20was%20in%20too%20zen%20of%20a%20place%20and%20lacking%20tomato%20paste.%20%20After%20a%20quick%20trip%20to%20Trader%20Joe's%20(the%20one%20that%20I%20can%20see%20from%20my%20patio)%20on%20the%20way%20back%20from%20running%20errands,%20I%20picked%20up%20some%20tomato%20paste,%20some%20Belgian%20raspberry%20beer,%20a%20hunk%20of%20fresh%20ginger%20and%20a%20double%20pack%20of%20tofu.%20%20I%20had%20originally%20intended%20to%20make%20the%20shopping%20trip%20much%20more%20substantial,%20but%20my%20shopping%20list%20had%20other%20plans.%20%20It%20laid%20itself%20to%20rest%20at%20the%20bottom%20of%20a%20Target%20shopping%20cart...%20I%20think.%3C/p%3E%3Cp%3EEither%20way,%20this%20recipe%20is%20amazing.%20%20I%20don't%20have%20too%20much%20experience%20cooking%20with%20lentils;%20out%20of%20all%20the%20varieties%20red%20lentils%20are%20the%20easiest%20to%20cook%20with.%20%20Primarily%20they%20just%20don't%20take%20as%20long%20to%20cook,%20hence%20hurry%20curry.%20%20Another%20bonus%20is%20that%20you%20probably%20have%20most%20of%20these%20ingredients%20somewhere%20buried%20in%20your%20cupboards.%20%20However,%20if%20your%20curry%20powder%20was%20discovered%20in%20the%20back%20of%20your%20pantry...%20you%20might%20want%20to%20consider%20replacing%20it;%20curry%20powders%20go%20stale%20pretty%20fast.%3C/p%3E%3Cp%3ELentil%20Spinach%20Hurry%20Curry%3C/p%3E%3Cp%3EAdapted%20from%20Kitchen%20Demure%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%20a%20small%20to%20medium%20pan%20add%20the%20oil%20and%20the%20onions.%20Turn%20the%20heat%20to%20med/high%20and%20saute,%20stirring%20constantly%20until%20they%20soften%20a%20little.%3C/p%3E%3Cp%3EAdd%20the%20garlic%20and%20the%20ginger%20and%20continue%20to%20stir.%20When%20the%20mixture%20is%20lightly%20golden,%20add%20the%20curry%20powder%20and%20stir%20for%20another%2020%20seconds%20or%20until%20you%20can%20smell%20the%20spices.%3C/p%3E%3Cp%3EAdd%20the%20lentils%20and%20water%20and%20bring%20to%20a%20simmer.%20Let%20the%20lentils%20cook%20for%2015-20%20min.%3C/p%3E%3Cp%3EAdd%20the%20tomato%20paste%20and%20stir%20to%20combine.%20Add%20salt%20and%20pepper%20to%20taste.%20Stir%20in%20the%20spinach%20leaves%20and%20serve.%3C/p%3E){kind=link}
