  • 1 lb Potatoes (about 2 medium Sized)
  • 3 Tbsp. Water
  • 1/2 c. Minced onion
  • 2 Tbsp. Bacon drippings
  • 1 can (12 ounce) corned beef Or possibly
  • 2 x - c. cooked corned beef
  • 1 can (8 ounce) diced beets, liquid removed
  •     Or possibly 1 c. cooked diced beets
  • 1/4 c. Lowfat milk
  • 2 Tbsp. Minced fresh parsley
  •     Salt and pepper to taste

Directions

  1. Peel and dice potatoes into 1/2" cubes.Place in a 4 c. glass measure;add in water.Cover with plastic wrap,venting spout area. Microwave on high 6 to 7 min.Set aside. Place onion and bacon drippings in a 2 quart.
  2. casserole.Cover with lid or possibly plastic wrap and microwave on high 2 to 3 min or possibly till onion is tender.Stir in potatoes,corned beef,beets,lowfat milk and parsley.Add in salt and pepper to taste.Microwave on high 3 min or possibly to desired temperature.If you like,mix may be browned in a skillet on conventional range top in lieu of final reheating in microwave.Makes 4 servings.
