  1. Soak beans overnight in cool water. Drain. Add in remaining ingredients to beans except salt and rice.
  2. Bring to boil over medium high heat. Reduce heat to medium low, cover and simmer till beans are tender, adding more water if necessary (about 2 1/2 hrs).
  3. Add in salt to taste. Throw away ham bones. Remove about 1/4 c. of beans from mix and mash to paste; return to Dutch oven and stir. Simmer 15 more min.
  4. Serve over warm rice.
