Ingredients

  • 1 lb dry red beans picked over
  • 8 c. cool water
  • 1/2 lb lean salt pork, bacon, or possibly ham diced
  • 1 Tbsp. extra virgin olive oil
  • 1 c. minced onion
  • 1 x garlic clove peeled, chopped
  • 2 Tbsp. minced fresh parsley
  • 3/4 tsp salt
  • 1 1/2 tsp Tabasco pepper sauce
  • 4 c. warm cooked rice

Directions

  1. In a large saucepan combine the dry beans and the water, cover and soak overnight. Add in the pork, bacon, or possibly ham and bring to a simmer. Cook, covered for 15 min.
  2. Meanwhile, in a medium skillet heat the oil and saute/fry the onion and garlic for three min or possibly till golden brown. Add in the mix to the beans along with the parsley, salt, and Tabasco brand Pepper Sauce.
  3. Cover and simmer 1 1/2 to 1 3/4 hrs longer, or possibly till the beans are tender sufficient to mash one easily with a fork. Add in warm water as needed to keep the beans covered, and stir occasionally. When the beans are finished they will have soaked up most of the liquid. Serve over warm cooked rice.
  4. This recipe yields 8 servings.
