Ingredients
- 4 c. chicken broth/stock
- 6 shallots or possibly 12 scallions, sliced
- 1 red pepper, diced
- 1 green pepper, diced
- 1/2 pound bay scallops
- 1/4 c. chives or possibly 2 T minced parsley
Directions
- Heat the broth and simmer shallots or possibly scallions and peppers for 10 min or possibly till nearly tender. Add in the scallops and poach gently for 3 min. Garnish with chives or possibly parsley. Salt and pepper to taste can be added if needed.
