Grilled Ribeye Steak

We are just back from our NJ trip to celebrate my mother-in-law’s 90th birthday. On our arrival night we thought we would do an easy meal; as most of the group wouldn’t arrive until the next day. Traditionally, we have a steak on the grill the night just before we leave but with all the festivities this wasn’t going to happen, thus the first night steak night.

I constantly get questions about how long to grill steaks. When buying large ribeyes you really don’t want to over-cook them. The basic rule is to grill at medium to high temperature for 1 minute per 1/4 of steak. So a 1″ steak would be grilled for 4 minutes per side. This works for any thickness of steaks. We grilled some beautiful 2 1/2 inch ribeyes for 10 minutes per side and they came out perfect.

Let steaks sit at room temperature for one half hour. Season with salt and pepper; drizzle olive oil over steaks. Grill over medium high heat- turn only once and cook to 120 degrees for rare, about 9 minutes. A good rule of thumb is to grill 1 minute per side for each 1/4 of thickness. So a 1 inch steak would take 4 minutes per side. Allow steaks to rest for 10 minutes after removing from the grill.
