?%3C/p%3E%3Cp%3EWell,%20sure...%20if%20one%20of%20the%20ingredients%20is%20a%20cake%20mix,%20which%20arguably%20has%20a%20bunch%20of%20ingredients,%20but%20since%20I%20only%20have%20to%20open%20one%20box,%20I'll%20concede%20it%20is%20%22one%20ingredient.%22%3C/p%3E%3Cp%3EThis%20recipe%20popped%20up%20in%20my%20Facebook%20feed%20the%20other%20day.%20Intrigued,%20I%20read%20the%20ingredients,%20remembering%20that,%20back%20in%20the%20day,%20Duncan%20Hines%20used%20to%20make%20a%20vegan%20yellow%20cake%20mix.%20The%20author%20advises%20using%20only%20real%20butter,%20as%20she%20doesn't%20know%20how%20margarine%20would%20work,%20but%20I%20conveniently%20ignored%20that%20part.%3C/p%3E%3Cp%3EI%20headed%20to%20the%20store,%20beelined%20for%20the%20baking%20aisle,%20and%20learned%20that%20my%20Duncan%20Hines%20yellow%20mix%20of%20yore%20still%20appeared%20to%20be%20vegan,%20but%20had%20one%20intolerable%20ingredient:%20Red%2040.%20As%20many%20of%20you%20may%20know,%20Curlytop%20and%20Snugglebug%20both%20have%20a%20crazy%20allergy%20to%20red%20dye,%20so%20that%20particular%20mix%20was%20out.%20I%20fruitlessly%20searched%20for%20an%20alternate%20yellow%20cake%20mix,%20but%20was%20met%20with%20more%20Red%2040,%20and%20lots%20of%20dairy%20ingredients.%3C/p%3E%3Cp%3EWeary,%20but%20not%20defeated,%20I%20visited%20the%20nutrition%20aisle,%20where%20I%20found%20an%20organic%20vanilla%20cake%20mix%20devoid%20of%20dairy%20and%20dyes.%20SCORE!%20While%20I%20was%20there,%20I%20looked%20for%20some%20organic%20lemon%20pie%20filling,%20but%20didn't%20find%20any.%20*sigh*%3C/p%3E%3Cp%3EBack%20to%20the%20baking%20aisle%20I%20went,%20only%20to%20find%20that%20all%20the%20cans%20of%20lemon%20pie%20filling%20had%20eggs%20in%20them.%20Gah!%20I%20was%20almost%20ready%20to%20chuck%20the%20cake%20mix%20and%20bolt%20from%20the%20store%20when%20a%20jar%20of%20yellow%20stuff%20caught%20my%20eye.%20It%20was%20a%20store%20brand,%20in%20a%20glass%20jar.%20A%20review%20of%20ingredients%20assured%20me%20that%20I%20could%20proceed,%20without%20eggs.%20Woot!%3C/p%3E%3Cp%3EI%20used%20my%20favorite%20vegan%20stick%20margarine,%20and%20it%20turned%20out%20fine.%20Don't%20let%20the%20sweet%20lady%20with%20doubts%20about%20using%20anything%20but%20real%20butter%20scare%20you%20away%20from%20this%20recipe,%20because%20it's%20actually%20a%20genius%20dessert%20that%20turns%20out%20far%20fancier%20than%20anything%20so%20simple%20has%20a%20right%20to.%20I%20actually%20allowed%20the%20margarine%20to%20soften%20just%20a%20bit,%20but%20didn't%20let%20it%20warm%20to%20room%20temperature,%20and%20it%20worked%20out%20splendidly.%3C/p%3E%3Cp%3EThis%20is%20a%20%22sweet%20lemon%22%20dessert,%20rather%20than%20a%20tangy%20one.%20That%20means%20you%20won't%20have%20the%20same%20reaction%20as%20this%20super-cute%20baby%20when%20you%20taste%20it:%3C/p%3E%3Cp%3EHere's%20how%20I%20did%20it:%3C/p%3E%3Cp%3EVegan%203-Ingredient%20Lemon%20Crumble%20Bars%3C/p%3E%3Cp%3E1%20box%20yellow%20or%20white%20vegan%20cake%20mix%20(check%20for%20dairy%20ingredients%20or%20Red%2040,%20if%20allergies%20are%20an%20issue)%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees,%20and%20oil%20the%20inside%20of%20a%209%22%20x%2013%22%20casserole%20dish.%3C/p%3E%3Cp%3EIn%20a%20stand%20mixer,%20combine%20cake%20mix%20with%20stick%20margarine,%20mixing%20on%20medium-low%20speed%20until%20fine%20and%20crumbly.%3C/p%3E%3Cp%3ESet%20aside%201/2%20to%203/4%20cup%20of%20the%20crumbly%20mix,%20and%20dump%20remaining%20mix%20into%20bottom%20of%20casserole%20dish,%20pressing%20down%20firmly%20into%20an%20even%20layer.%3C/p%3E%3Cp%3EScoop%20the%20lemon%20pie%20filling%20onto%20the%20top%20of%20the%20pressed%20mix,%20and%20spread%20evenly.%3C/p%3E%3Cp%3ESprinkle%20the%20reserved%20crumbly%20mix%20evenly%20over%20the%20top%20of%20the%20lemon%20layer.%3C/p%3E%3Cp%3EBake%20for%20about%2025%20minutes,%20checking%20at%2020.%20The%20top%20crumbs%20should%20just%20begin%20to%20develop%20a%20golden%20brown%20color.%3C/p%3E%3Cp%3ERemove%20from%20oven,%20allow%20to%20cool,%20then%20chill%20before%20serving.%3C/p%3E%3Cp%3E%22Like%22%20Sexy%20Vegan%20Mama%20on%20Facebook!%20Don't%20forget%20to%20swing%20by%20The%20Gonzo%20Mama's%20place%20to%20see%20what%20she's%20up%20to.%20Get%20my%20vegan%20dessert%20cookbook%20(co-authored%20with%20William%20Maltese),%20Get-Real%20Vegan%20Desserts:%20Vegan%20Recipes%20for%20the%20Rest%20of%20Us,%20on%20Amazon!%3C/p%3E){kind=link}
