‘Sports do not build characters. They reveal it.’ I would never have known this side of my son but for the sports day celebrations in their school. He along with other friends helped their teachers organize the props, dresses and other essential accessories for the shows on Sports day. Some of the students (including him) who stay near school premises took extra food, water and goodies daily to share with others during long hours of practice sessions in school. Proud moments for any parent.

And I promised him to make a dessert on their sports day which resembled the color of their dress code, Yellow.

Think of yellow and Pumpkin pops up in mind. This extremely light, delicate and scrumptious Pumpkin Pie was what I baked and shared with my son’s friends.

The school playground was decorated beautifully for the Sports day. All the participants and parents were seated facing each other across the ground.

A few sports events and it was time for entertainment.

Son is all smiles to find us there when I waved and zoomed in from the other side to click.

Ingredients;

For the Crust

Method;

Pie crust; Lightly grind the oats and mix it with salt and All purpose four (maida ina large vessel.

Make a well in between and pour oil in it. Rub the dry ingredients with finger tips to incorporate the oil. Add water little by little and keep mixing the ingredients till it holds together.

Spray a pie dish with oil (preferably with removable bottom). Pour the above prepared pie crust in it. Spread it evenly all over the pie dish and press it lightly to mae it uniform.

Bake the pie crust at 200°C for 10 minutes.

Pie Filling; Prepare pumpkin puree as per the following recipe. Mix cornflour or arrowroot powder in cold milk and empty it in the pumpkin puree.

Pour the pie filling in the baked pie crust and spread it evenly in the pie dish. Sprinkle caramel chips over the pie.

Bake the pumpkin pie at 200°C for 35-40 minutes till the top turns brown.

Cool the pumpkin pie completely before slicing, as it takes time for the pie to get firm.

Sprinkle powdered sugar over the cooled Pumpkin pie, slice and serve cold with fresh cream or caramel sauce.

The caramel chips added over the pie filling made it a winner recipe.

An evening worth spent. Watching our children grow and become a responsible human being in life are a few priceless moments to treasure for any parent.

As for the verdict of this recipe…to my surprise most of his friends have never eaten a pumpkin before and don’t wish to try it either. Hmm..reflects the feeling of another pumpkin hater during her childhood days

Well..well, wish I could show their reactions when I revealed that the dessert they all polished off had Pumpkin as the star ingredients!

Note;

Use coconut milk for making the filling instead of plain milk for much added flavor.

Replace cornflour powder and milk mix with 4-5 tbsp. of condensed milk and make another version of delicious pumpkin pie.

Add a little extra water to make a dough of pie crust, roll it into a circle and lay it in the pie dish to bake.

Use chocolate chips or sprinkle brown sugar over the pie filling before baking if you cannot get caramel chips for the recipe.
