Really Easy Scalloped Potatoes

Ingredients

  • 8 medium potatoes, thinly sliced
  • 1 medium red or white onion, thinly sliced in rings
  • ½ cup butter
  • ½ cup all-purpose flour
  • 2 tsp. salt
  • ½ tsp. ground black pepper
  • ½ tsp. paprika
  • 4 ½ cups milk

Directions

  1. Grease a 3 quart casserole.
  2. Melt butter in medium saucepan. Mix in flour, salt, and pepper. Stir in milk until it boils and thickens.
  3. To assemble, layer ½ potatoes, then ½ onions in prepared casserole. Pour ½ sauce over top. Layer second ½ potatoes and onions followed by second ½ sauce.
  4. Sprinkle with paprika. Bake, covered with foil, in 350 degree oven for about 1 hour until tender. Remove cover for last 10 minutes.
