Ingredients
- Strawberry Muffins
- Inspired my Raspberry Muffins which was adapted from Joy of Baking’s Strawberry Bread
- 6 T. coconut oil
- ½ c. 2% milk
- 1 large farm fresh egg
- 1 egg yolk
- 1/2 t. almond extract
- 1 ½ c. flour
- ¾ c. sugar
- 1 ½ t. baking powder
- ¾ t. fine sea salt
- 1 1/2 c. fresh strawberries, chopped
- For topping:
- 2/3 cup flour
- 2/3 cup powdered sugar
- 1/4 teaspoon cinnamon
- pinch of salt
- 5 tablespoons butter, melted
- Preheat oven to 375 degrees and prepare 12 large muffin tins with cooking spray. (You can also use cupcake liners.)
