  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/2 cup packed light brown sugar
  • 3/4 cup unsalted butter, chilled and cut in pieces
  • 1 1/2 cups uncooked quick-cooking (not instant) rolled oats
  • 2 cups fresh raspberries tossed with 1 cup sugar - or - 1 cup
  • red raspberries
  • 1/2 cup sliced almonds
  • Confectioners' sugar, for sprinkling

Directions

  1. Preheat the oven to 350 F
  2. Butter a 9-inch square baking pan
  3. In a large bowl, stir together the flour, baking powder, salt, and both of the sugars until well blended
  4. Cut in the butter until crumbly
  5. Mix in the oatmeal
  6. Press two-thirds of the mixture into the bottom of the baking pan
  7. Spread the sugar-coated raspberries over the crumb layer, or spread the raspberry jam over the crumb layer
  8. Sprinkle with the remaining crumbs
  9. Top with the sliced almonds
  10. Pat down firmly
  11. Bake for 30-35 minutes or until golden
  12. Cool in the pan on a wire rack.
  13. Sprinkle with confectioners' sugar
  14. Cut into squares
