Ranch Style Eggs

A Tex-Mex delight. Serve with soft warm corn tortillas.

Ingredients

  • 2 cups cooked pinto beans
  • 1 cup chunky salsa
  • 6 eggs
  • 1/2 cup fresh cilantro, finely chopped
  • 1/2 cup shredded pepper jack cheese
  • salt & pepper to taste

Directions

  1. Soft-scramble the eggs in a hot lightly greased skillet.
  2. Add beans and salsa and continue cooking until eggs are fully cooked.
  3. Stir in cilantro, turn off heat, and allow to sit for 1 minute.
  4. Top with shredded cheese.
  5. Add salt & pepper to taste.
