Ingredients

  • Homemade Pasta Dough
  • 3 cups all purpose flour
  • 1 cup warm water
  • 2 tablespoons olive oil
  • Ragu Alla Bolognese - Adapted From Real Italian, April 2010
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 1/2 medium carrot, peeled and finely diced
  • 1 medium rib celery, finely diced
  • 1 lb. ground pork
  • 1/2 lb. thinly sliced prosciutto de Parma, very finely diced
  • freshly ground black pepper (no salt is added because of the saltiness of the chicken broth and Parmesan cheese)
  • 1/2 cup dry white wine
  • 1 tablespoon fresh basil, chopped
  • 1 (28 oz.) can Italian plum tomatoes with their juices
  • 1 cup chicken or vegetable broth
  • 1/2 cup hot milk
  • 1 cup Parmesan cheese, grated
