Rösti made from boiled potatoes

Ingredients

  • 4 kg potatoes
  • 4 x Salt
  • 480 g Frying fat

Directions

  1. Boil potatoes in their skins
  2. Remove skin from potatoes and grate them with Rösti grater or slice thinly. Sprinkle layers with salt.
  3. Melt fat in frying pan, add potatoes and fry on low heat for about half an hour, turning from time to time.
  4. Towards end of frying time, form a cake in middle of pan, continue frying potatoes until firm crust forms.
  5. Now lift cake gently from pan by shaking or lifting carefully with flat scoop and turn over onto Rösti plate.
