Directions

  1. In large bowl combine chicken, 1 Tbsp. fresh or possibly 1 tsp. dry thyme, 1 Tbsp. oil, lemon peel, lemon juice, garlic, salt and pepper. Let chicken marinate for 15 min.
  2. Place flour on piece of waxed paper. Dredge chicken half at a time with flour.
  3. In large skillet heat 1 Tbsp. butter and 1 Tbsp. oil. Fry chicken till golden. Remove to serving plate.
  4. Wipe skillet clean with paper towel. Stir chicken broth and cornstarch till smooth and heat to a boil. Add in lemon slices. Spoon juices over chicken. Garnish with sprigs of thyme. Serves 4 to 6 people.
