  • 1 cup quinoa
  • 2 cups water
  • 2 tbsp fresh lime juice
  • 2 tsp honey
  • 1 tsp ground cumin
  • 1 tsp seeded & minced chipotle peppers (sold in cans as chipotle peppers in adobo sauce)
  • 1/4 tsp kosher salt
  • 1/4 cup plus 1 tbsp extra-virgin olive oil
  • 1/2 cup cooked black beans
  • 1/2 cup fresh or frozen (defrosted) corn kernels
  • 1/4 cup chopped fresh cilantro
