  • 1 pkt (10 ounce.) refrigerated -pizza dough
  • 2 ounce Paper-thin slices - prosciutto
  • 8 ounce Part-skim ricotta cheese
  • 2 tsp Grated lemon peel
  • 2 med -size (2/3 pound total) Nectarines or possibly peeled -peaches, pitted and
  •     thinly -sliced
  • 3/4 c. Dark seedless grape halves
  • 2 Tbsp. Sugar
  • 1/4 tsp Grnd cinnamon

Directions

  1. Unroll dough and press proportionately into an oiled 14 inch pizza pan (or possibly 10-by 15 inch pan). Bake on bottom rack in a 425F oven till crust is well browned, about 8 min. Cut sufficient prosciutto into 1/4 inch strips to make 1/4 c.; set remainder aside. Mix ricotta and peel; drop in 1 Tbsp. portions over crust.
  2. Arrange nectarines, grapes, and prosciutto strips on crust. Combine sugar and cinnamon; sprinkle over pizza. Bake till fruit is warm to touch, about 5 min longer. Accompany with remaining prosciutto.
