Quick and Easy Taco Soup

Quick and easy comfort food that makes a hearty dinner. One of the few dinners that my whole family loves. I always make this before the kids go out trick or treating on Halloween. Freezes well.

Goes Well With: corn tortilla chips and mexican cheese

Ingredients

  • 2 pounds lean ground beef
  • 1 diced onion
  • 2 minced cloves of garlic
  • 1 package taco seasoning (I use Taco Bell's taco seasoning mix.)
  • 1 large can of tomato sauce
  • 1 can original Rotel tomatoes and green chiles
  • 1 can yellow corn including liquid
  • 1 cup of water
  • 1 can black beans drained and rinsed (optional)
  • Salt and pepper to taste

Directions

  1. Brown ground beef and drain fat.
  2. Add onion and garlic and cook over low heat for 5 minutes
  3. Add rest of ingredients and bring to a boil.
  4. Cover and simmer for 20 minutes.
  5. Serve with corn tortilla chips and light Mexican cheese.
