Quick and easy comfort food that makes a hearty dinner. One of the few dinners that my whole family loves. I always make this before the kids go out trick or treating on Halloween. Freezes well.

  1. Brown ground beef and drain fat.
  2. Add onion and garlic and cook over low heat for 5 minutes
  3. Add rest of ingredients and bring to a boil.
  4. Cover and simmer for 20 minutes.
  5. Serve with corn tortilla chips and light Mexican cheese.

    Delicious and so easy. More like a stew, it was perfect on a cool evening. My son used little scoop shaped tortilla chips as a spoon to eat his. Very kid friendly and perfect for a large group.
