%20and%20since%20then%20Katie%20and%20Sandi%20have%20also%20both%20shared.%20What%20a%20group%20of%20amazing%20women,%20seriously.%20I%20love%20our%20casual%20get-togethers%20where,%20in%20addition%20to%20baring%20our%20souls,%20we%20play%20with%20each%20other's%20pets,%20share%20Spanish%20language%20trivia%20(Sandi%20is%20Colombian%20and%20Katie%20spent%20a%20lot%20of%20time%20in%20Guatemala.%20And%20I'm%20a%20...%20good%20listener?),%20and%20EAT.%3C/p%3E%3Cp%3EKatie%20makes%20moist%20banana%20bread,%20killer%20baba%20ghanoush%20and%20red%20pepper%20hummus,%20and%20always%20shares%20fresh%20fruit%20or%20veggies.%20Sandi%20shares%20Colombian%20treats%20and%20makes%20amazing%20arepas.%20I%20make%20a%20mean%20artichoke%20dip,%20if%20I%20do%20say%20so%20myself%20(it's%20actually%20Mike's%20mom's%20recipe,%20so%20I%20can%20brag%20on%20it.)%20Next%20meeting,%20I'm%20going%20to%20kick%20the%20heat%20up%20a%20notch%20with%20these%20adorable%20Chipotle%20Shrimp%20Cups.%20They%20look%20so%20fancy,%20right?%20But%20they're%20seriously%20ready%20in%2020%20minutes%20flat!%3C/p%3E%3Cp%3EThese%20little%20finger%20foods%20start%20with%20crisped%20phyllo%20cups%20straight%20from%20the%20grocery%20store%20freezer%20aisle.%20Before%20topping%20them%20with%20my%20favorite%20chipotle%20shrimp%20recipe%20from%20Grandbaby%20Cakes,%20I%20filled%20them%20with%20a%20mixture%20of%20sour%20cream,%20Philadelphia%20Cream%20Cheese,%20and%20green%20onions.%20I%20always%20keep%20Philadelphia%20Cream%20Cheese%20on%20hand%20because%20it%E2%80%99s%20made%20with%20fresh%20milk,%20real%20cream,%20and%20no%20preservatives%20%E2%80%94%20nothing%20else%20tastes%20like%20it.%20I'm%20going%20to%20stick%20this%20mixture%20in%20all%20sorts%20of%20Tex-Mex%20treats%20in%20the%20future%20(oh%20my%20gosh,%20it'd%20be%20so%20good%20in%20enchiladas);%20it%20was%20tangy,%20creamy,%20and%20delicious%20under%20the%20spicy%20shrimp!%20Garnish%20each%20bite%20with%20a%20cilantro%20leaf%20before%20devouring.%3C/p%3E%3Cp%3EOne%20year%20ago:%20Brownie%20Blackout%20Mousse%20Cake%3C/p%3E%3Cp%3E2%20(15-count)%20packages%20Phyllo%20cups%201%20(8-ounce)%20brick%20Philadelphia%20Cream%20Cheese,%20softened%201/2%20cup%20sour%20cream%201/4%20cup%20finely%20chopped%20green%20onions%201/4%20teaspoon%20salt%202-3%20grinds%20pepper%201%20(7-ounce)%20can%20chipotle%20peppers%20in%20adobo%20sauce%201%20pound%20medium%20shrimp,%20deveined%20with%20tails%20and%20shells%20removed%201%20tablespoon%20minced%20garlic%203%20tablespoons%20olive%20oil%20Salt,%20to%20taste%202%20tablespoons%20fresh%20lime%20juice%202%20tablespoons%20unsalted%20butter%203-4%20tablespoons%20chopped%20cilantro%20(for%20garnish)%3C/p%3E%3Cp%3ECrisp%20the%20cups:%20Preheat%20the%20oven%20to%20350%20degrees%20F.%20Crisp%20your%20phyllo%20cups%20on%20a%20parchment-lined%20baking%20sheet%20in%20the%20oven%20for%205%20minutes%20before%20setting%20aside%20to%20cool%20completely.%20Fill%20the%20cups:%20When%20the%20cups%20are%20cool,%20whip%20the%20Philadelphia%20Cream%20Cheese,%20sour%20cream,%20green%20onions,%20salt,%20and%20pepper%20together.%20Transfer%20this%20mixture%20to%20a%20zip-top%20bag%20with%20the%20corner%20cut%20off%20and%20fill%20each%20phyllo%20cup.%20Make%20the%20Chipotle%20Shrimp:%20Process%20the%20chipotle%20peppers%20and%20sauce%20in%20a%20food%20processor%20until%20smooth.%20Place%20the%20puree,%20shrimp,%20and%20garlic%20together%20in%20a%20zip-top%20bag%20and%20gently%20work%20the%20bag%20around%20until%20the%20shrimp%20are%20well%20coated.%20Place%20the%20shrimp%20in%20the%20refrigerator%20for%2020%20minutes%20to%20marinate.%20Heat%20the%20olive%20oil%20in%20a%20large%20skillet%20over%20medium%20heat%20until%20it%20shimmers.%20Add%20the%20shrimp%20and%20sauce%20to%20the%20pan%20and%20sprinkle%20with%20salt%20and%20the%20lime%20juice.%20Cook%20for%20around%204%20minutes,%20tossing%20the%20shrimp%20as%20needed,%20until%20the%20shrimp%20are%20cooked%20through.%20Remove%20from%20the%20heat%20and%20gently%20mix%20in%20the%20butter.%20Assemble:%20Top%20each%20filled%20cup%20with%20one%20shrimp%20and%20a%20leaf%20of%20cilantro.%20Serve%20warm.%20%203.2.2925%3C/p%3E){kind=link}
