Queen Charlotte Geo Duck With Tarragon Aioli

Ingredients

  • 1 whl Geo duck, live
  • 1/4 c. tarragon, minced
  • 1/2 c. mayonnaise
  • 1 Tbsp. garlic, crushed
  • 12 x yellow/golden brown beet chips
  •     flying fish roe

Directions

  1. Poach the live Geo Duck in 3 liters of simmering water for 1 minute.
  2. Pull aside and peel the outer skin off the slightly cooked (blanched) Geo Duck.
  3. Thinly slice the duck and present it on a plate in a pinwheel or possibly circular fashion.
  4. Garnish with mayonnaise mixed with tarragon & garlic (the aioli).
  5. Finish with golden brown beet chips & flying fish roe.
