Ingredients

  • Cream cheese crust:2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt (for savory recipes, use 1 1/2 times the salt)
  • 1/8 teaspoon baking powder
  • 3/4 cup (6 ounces) cold cream cheese, cubed
  • 1/2 cup plus 2 tablespoons (1 1/4 sticks) cold unsalted butter, cubed
  • 1 1/2 tablespoons ice water
  • 1 tablespoon apple cider vinegar
  • Filling:
  • 2 cups pumpkin puree
  • 6 ounces (about 3/4 cup) sweetened, condensed milk
  • 1/2 cup light brown sugar
  • 2 eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 kosher salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground all-spice
