Ingredients

  • 1 c. raisins
  • 1/4 c. orange juice
  • 1 can canned pumpkin
  • 1 1/8 c. granulated sugar
  • 1/2 c. orange juice
  • 2 x Large eggs
  • 1/4 c. butter or possibly margarine (1/4 stick)
  • 2 c. flour
  • 2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1 c. minced walnuts

Directions

  1. Preheat oven to 350 degrees.
  2. In a 2 c. measuring c., put the 1/4 c. orange juice and 1 c. raisins. Heat them for one minute in the microwave. Stir as the raisins plump up. Drain off the remaining orange juice and set aside.
  3. In your mixer, beat together the pumpkin, sugar, orange juice, Large eggs and softened butter till well blended. Remove mixing bowl from the mixer stand. Add in the dry ingredients all at once, stirring quickly by hand till they are moistened. Add in the walnuts and raisins and stir quickly till combined. Place the mix into 2 foil loaf pans, 4x8 inches, that have been lightly greased and floured. Bake in oven for about 45 to 50 min or possibly till a cake tester inserted in the center comes out clean.
  4. Makes two 8-inch loaves.
