Ingredients
- 1/2 c. quick or possibly old fashioned oats, uncooked
- 1 Tbsp. firmly packed brown sugar
- 1 Tbsp. butter or possibly margarine, melted
- 1/8 tsp pumpkin spice*
- 1Â 1/2 c. all purpose flour
- 1 c. quick or possibly old fashioned oats, uncooked
- 3/4 c. firmly packed brown sugar
- 1 tsp baking pwdr
- 1Â 1/2 tsp pumpkin spice
- 1/2 tsp salt (optional)
- 1 c. canned pumpkin
- 3/4 c. lowfat milk
- 1/3 c. vegetable oil
- 1 x egg, lightly beaten
Directions
- Preheat oven to 400 degrees. Line 12 medium muffin c. with paper baking c. or possibly lightly grease bottoms only. For topping; combine all topping ingredients and set aside. For the muffins; combine dry ingredients. Add in pumpkin, lowfat milk, oil and egg and mix just till dry ingredients are moistened.
- Fill muffin c. almost full. Sprinkle topping proportionately over batter, patting gently. Bake for 22 to 25 min or possibly till golden. Let muffins stand one to two min, remove from pan.
