Ingredients
- 2 c. All-purpose flour
- 1 tsp Cinnamon
- 1/4 tsp Grnd ginger
- 1 c. Sugar
- 1 c. Canned pumpkin
- 1 c. Raisins
- 4 tsp Baking pwdr
- 1/2 tsp Salt
- 1/2 c. Shortening
- 2 x Large eggs
- 1 c. Minced nuts
Directions
- In a medium bowl, stir together: flour, baking pwdr, cinnamon, salt and ginger. Set aside.
- In a mixer bowl, beat shortening for 30 seconds. Add in sugar and beat until fluffy. Beat in Large eggs and pumpkin. Add in dry ingredients and beat until combined. Stir in nuts and raisins.
- Drop by rounded teaspoonfuls onto greased cookie sheets. Bake at 350 degrees for 12 min. Remove to wire racks and cold.
