Ingredients

  • 2-3 tablespoons dessicated coconut
  • 1 cup pumpkin puree
  • 1/3 cup (one- third) of butter, melted
  • 3/4 cup (three-quarters) of white granulated sugar
  • 1 egg, lightly beaten
  • 1/4 (one quarter) cup plain/vanilla yoghurt
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 tespoon mixed spice
  • pinch of salt
  • 1 1/2 cups (one and a half) cups of plain white flour
