Ingredients

  • 2 cups chopped white or yellow onion
  • 28 ounces plain pumpkin puree
  • (NOT FOR PIES)
  • 3 1/2 cups cold water
  • 4 cups vegetable stock
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon brown sugar
  • 3/4 cup uncooked long grain & wild rice
  • 2 teaspoons white wine
  • 1/2 cup canned evaporated milk
  • ( I used fat free)
