  • 700 grams leek, white and green parts
  • 1/2 cup olive oil for frying the leek
  • 1 cup matzo meal
  • 4 eggs
  • 1/2 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • matzo-based bread crumbs or matzo meal for coating the patties — about 1 cup if not more
  • more oil for pan frying
