Potato Salad With Cumin And Cilantro Recipe

Ingredients

  • 2¼ lb (1 kg) hard-fleshed potatoes
  • 1 tsp grnd cumin
  • 1 lemon
  • 4 garlic cloves
  • 1 bunch fresh cilantro
  • ½ c. (10 cl) extra virgin extra virgin olive oil
  • salt, pepper

Directions

  1. Peel and roughly chop the garlic cloves
  2. Squeeze the lemon to extract all the juice
  3. Remove the stalk from the cilantro and chop finely
  4. Peel the potatoes and cut them into large pcs of the same size
  5. Bring a large saucepan of water to boil on high heat
  6. Add in the pcs of potato and the garlic
  7. Let it cook for 15-20 min till the potatoes are cooked but still hard.
  8. Drain the potatoes and put them straight into a large pan on medium heat
  9. Pour in the extra virgin olive oil, lemon juice, cumin and minced cilantro and stir well
  10. Add in salt and pepper to taste.
  11. Leave on the heat for 2 min.
