  • 1 large and firm ripe mango, diced
  • 1 tbsp of calamansi juice
  • 1 cup of sweet ham, diced
  • 1/2 cup of coarsely chopped celery
  • 4 small potatoes, cooked and cubed
  • 2 hard-boiled eggs, coarsely chopped
  • 1 tbsp of chopped onion
  • 1/2 cup of cooked peas
  • 1 medium carrot, cooked and diced
  • Dressing:
  • 1 250ml all-purpose cream
  • 2 tbsp prepared mustard
  • salt and pepper to taste

Directions

  1. Combine all salad ingredients into a bowl.
  2. Mix dressing ingredients, toss in salad and chill.
