  • 2 c. frzn potatoes O'Brien
  • 4 Large eggs
  • 1 c. cooked diced ham
  • 2/3 c. evaporated lowfat milk
  • 1 can cream of celery soup
  • 2 tbsp. instant chopped onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 2 tbsp. minced parsley

Directions

  1. Run warm water over potatoes to bring them to room temperature; drain well. Spread over bottom of buttered 8-inch square baking dish. Beat Large eggs in medium bowl. Stir in remaining ingredients; blend well. Pour over potatoes. Bake in moderate 350 degree oven, 25 to 30 min or possibly till knife inserted halfway between center and edge comes out clean.
