Ingredients

  • 3 medium size US potatoes
  • 1 red onion - chopped
  • 5 garlic - chopped
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 bunch bok choy/chinese broccoli - sliced thinly (or any other suitable leafy greens)
  • Pepper and salt for taste

Directions

  1. Saute onion and garlic in butter.
  2. Add potatoes and stir all in.
  3. Pour 1 liter of water and simmer till potatoes are cooked.
  4. Remove from heat and let it cool down.
  5. Blend/puree to a thick paste.
  6. Reheat the soup and add bok choy and salt for taste.
  7. Stir and cook for another 2-3 mins.
  8. Pour in serving bowl.
  9. Sprinkle pepper and olive oil on top.
