Potato And Spinach Soup Recipe

Ingredients

4-5 potatoes, cubed, skins on & cleaned 1 onion, minced 3-4 bouillon cubes 3 cloves garlic, pressed or possibly minced

1/2 pound mushrooms, fresh, sliced 1/2 pound spinach, fresh, cleaned Grnd pepper, to taste Oil, olive for sauteing

Directions

1. Saute/fry garlic and mushrooms in oil. Place cooked mushrooms and garlic in 6 qt pan with 1 1/2 qts of water plus all other ingredients. Simmer and add in pepper. Cook at medium heat till potatoes are done.
