Ingredients

  • 4-5 potatoes, cubed, skins on & cleaned
  • 1 onion, minced
  • 3-4 bouillon cubes
  • 3 cloves garlic, pressed or possibly minced
  • 1/2 pound mushrooms, fresh, sliced
  • 1/2 pound spinach, fresh, cleaned
  • Grnd pepper, to taste
  • Oil, olive for sauteing

Directions

  1. Saute/fry garlic and mushrooms in oil. Place cooked mushrooms and garlic in 6 qt pan with 1 1/2 qts of water plus all other ingredients. Simmer and add in pepper. Cook at medium heat till potatoes are done.
