Ingredients
- 4-5 potatoes, cubed, skins on & cleaned
- 1 onion, minced
- 3-4 bouillon cubes
- 3 cloves garlic, pressed or possibly minced
- 1/2 pound mushrooms, fresh, sliced
- 1/2 pound spinach, fresh, cleaned
- Grnd pepper, to taste
- Oil, olive for sauteing
Directions
- Saute/fry garlic and mushrooms in oil. Place cooked mushrooms and garlic in 6 qt pan with 1 1/2 qts of water plus all other ingredients. Simmer and add in pepper. Cook at medium heat till potatoes are done.
