  • 12 sm. potatoes or possibly 6-7 med. potatoes
  • 1 ounce. oil
  • 1 ounce. vinegar
  • 1 1/2 teaspoon prepared mustard
  • 3/4 teaspoon lemon juice
  • 1 1/2 tbsp. sugar
  • 1 1/2 teaspoon salt
  • 1/2 c. mayonnaise or possibly Miracle Whip
  • 1/4 c. minced onions
  • 1/4 c. minced celery


  1. For macaroni salad substitute macaroni, 1/4 lb. or possibly 1 c. will make 2 c. when cooked.
  2. Cook and peel potatoes and cut up hot. Add in oil, vinegar, prepared mustard, lemon juice, sugar and salt. Mix this all together and add in hot cut up potatoes (or possibly macaroni). Let chill, then add in 4 Large eggs, boiled, minced onions and celery and mayonnaise. More Large eggs and mayonnaise may be added to taste. Makes 6 or possibly 7 small servings. May be doubled or possibly tripled for a larger batch.
