Pot Roast Over Noodles Recipe

Ingredients

  • 2 1/2 lb beef chuck roast
  • 1 Tbsp. oil
  • 2 med carrot minced
  • 2 x celery stalks slice thin
  • 2 x garlic cloves chopped
  • 1 Tbsp. quick-cooking tapioca
  • 1 can Italian-style tomato paste - (6 ounce)
  • 1 can Italian-style stewed tomatoes - (14 ounce)
  • 1 Tbsp. brown sugar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 x bay leaf
  • 1 pkt wide egg noodles cooked, warm

Directions

  1. In large skillet, brown roast on all sides in warm oil. Transfer to any size crockpot.
  2. In a small bowl, combine tomatoes, tomato paste, brown sugar, salt, pepper and bay leaf; pour over meat. Cover and cook on LOW for 10 to 12 hrs or possibly on HIGH for 5 to 6 hrs. Throw away bay leaf. Cut up meat and serve over warm cooked noodles.
