  • 4 pound beef bottom round
  • 2 bay leaves
  • 1 lg. red onion, diced
  • 2 c. water
  • Adobo seasoning
  • 2 lbs. carrot sticks
  • 2 lbs. green beans
  • 1 tbsp. oil
  • 8 potatoes, peeled and halved
  • Pressure cooker

Directions

  1. Cut beef in half. Season with Adobo. Brown beef and onions in 1 Tbsp. oil. Add in bay leaves and water. Cook 30 min in pressure cooker on medium high heat. Open and add in carrots and beans. Cook 5 min. Remove all from pot. Add in potatoes (preferably Maine) to remaining water and cook 7 min.
