Ingredients

  • 2 med. onions, minced
  • 2 cloves garlic, chopped
  • 2 potatoes, diced
  • 2-3 carrots, diced
  • 1/2 head cabbage, minced
  • Bunch of kale, minced
  • 3/4 pound linguine, sliced
  • 16 ounce. can white kidney beans
  • 30 ounce. can Pastene grnd peeled tomatoes
  • 46 ounce. can chicken broth
  • Salt & pepper to taste

Directions

  1. Saute/fry onion and garlic in extra virgin olive oil. Add in diced potatoes, cabbage, carrots and half of the can of chicken broth. Cook till almost tender. Then add in linguine and kale, the rest of the broth and the canned tomatoes. Simmer 10-15 min. Season to taste.
